Full batch: 4 listed servings.
Sprinkle the gelatin over 100 mL of the measured cold water; bloom 5 minutes. Gently heat the juice or puree with the remaining 100 mL water until steaming, not boiling. Remove from heat, stir in the bloomed gelatin until fully dissolved, then cool to 95-104 F (35-40 C), keeping it liquid. Separately stir the clear whey into the remaining 140 mL cold water; let foam settle. Stir the whey mixture and measured sweetener gently into the liquid gelatin. Do not boil or vigorously froth the whey. Pour into clean silicone molds on a tray; chill 3-4 hours until firm. Unmold and divide the whole finished batch into four equal portions by weight. If it sets early, warm the bowl very gently; do not add uncounted liquid. Blend the fruit smooth before beginning.
Refrigerate covered at 40 F or below and use within 3 days. These moist homemade gummies are not shelf-stable. Do not leave out as packaged candy. Do not freeze for the intended texture.
Listed allergens: Milk. GF-eligible*. Ingredient badges are not a guarantee of safety. Check all packaged products and cross-contact.
A naturally opaque fruit gummy; use a compatible berry clear whey flavor. Vanilla is included. Each portion has about 10 g whey protein; the additional gelatin protein is not a complete muscle-building protein.
New development recipe; texture, exact product labels and finished yield need kitchen validation.
